Ingredients 1 cup ragi flour (finger millet flour, preferably fresh and finely ground) 2½ cups water Pinch of salt Method Bring water to a boil in a thick-bottomed pan. Add salt. Add 1–2 tbsp ragi flour to the boiling water and mix well (this prevents lump formation). Reduce the flame and slowly add the remaining ragi flour without stirring immediately. Cover and cook for 2–3 minutes on low flame. Using a wooden stick (traditional ragi muddhe stick ) or spatula, mix vigorously until smooth and lump-free. Continue cooking and mixing until the dough thickens and leaves the sides of the pan. Wet your hands slightly, take a portion, and shape into round balls while still warm. Enjoy roasted makhana as a healthy snack option loaded with protein, fiber, and essential nutrients to support your wellness goals. 16 Oct 2024 Roasted Makhana (Fox Nuts) Roasted Makhana (Fox Nuts) A light, crunchy, and nutrient-dense snack rich in antioxidants, protein, and fibre, perfect for a healthy, guilt-free treat. Food Info: Calories per Serving: ~90 kcal Servings: 4 Preparation Time: 5 minutes Cooking Time: 8–10 minutes Ingredients: 2 cups makhana (fox nuts) 1 tablespoon ghee or olive oil 1 teaspoon turmeric powder (optional) 1 teaspoon black pepper or red chili powder Salt to taste Instructions: Heat the Pan: Place a heavy-bottom pan or kadai on medium heat. Roast the Makhana: Add ghee or olive oil to the pan. Once warm, add the makhana and roast on low–medium heat. Season the Makhana: Sprinkle turmeric powder, black pepper or chili powder, and salt. Toss well so the spices coat the makhana evenly. Cook Until Crisp: Continue roasting for 6–8 minutes, stirring frequently until the makhana turn light, crunchy, and slightly golden.
