Kerala-Style Jackfruit Thoran
A dry jackfruit stir-fry with coconut and curry leaves. Great for resistant starch, gut flora, and satiety.

Raw jackfruit (boiled & shredded): 1 cup
Grated coconut: 2 tbsp
Curry leaves: 1 sprig
Mustard seeds: 1⁄2 tsp
Green chilli: 1
Coconut oil: 1 tsp
Turmeric: a pinch
Salt to taste
Method
Saute mustard seeds, curry leaves, and green chilli in coconut oil.
Add shredded jackfruit, turmeric, and coconut.
Stir-fry for 5–7 minutes on low flame.
