Kerala-Style Jackfruit Thoran

A dry jackfruit stir-fry with coconut and curry leaves. Great for resistant starch, gut flora, and satiety.

Ingredients

  • Raw jackfruit (boiled & shredded): 1 cup

  • Grated coconut: 2 tbsp

  • Curry leaves: 1 sprig

  • Mustard seeds: 1⁄2 tsp

  • Green chilli: 1

  • Coconut oil: 1 tsp

  • Turmeric: a pinch

  • Salt to taste

Method

  • Saute mustard seeds, curry leaves, and green chilli in coconut oil.

  • Add shredded jackfruit, turmeric, and coconut.

  • Stir-fry for 5–7 minutes on low flame.
