Jackfruit Kofta Curry

Soft jackfruit balls simmered in spiced curry. A hearty meatless meal rich in antioxidants and fibre.

Ingredients

  • Raw jackfruit (boiled & mashed): 1 cup

  • Grated paneer or tofu: 1⁄4 cup

  • Spices: Garam masala, chilli powder, salt, cumin, turmeric

  • Rice flour: 2 tbsp (binding)

Method

  • Make small koftas and shallow fry or bake.

  • Prepare the curry base and simmer the koftas in it.

  • Tomato-onion puree: 1⁄2 cup

  • Cashew paste: 2 tbsp

  • Spices: Cumin, coriander, chilli powder
