Cucumber Avocado Salad

A hydrating cucumber with creamy avocado, rich in good fats and fibre. Perfect for skin glow and summer detox.

Ingredients:

  • 1 cucumber, chopped

  • 1 ripe avocado, diced

  • ½ onion, thinly sliced

  • A handful of chopped walnuts

  • 1 tbsp freshly chopped coriander leaves

  • Salt to taste

  • Juice of 1 lemon

  • 1 tbsp fajita seasoning

Method:

  1. In a large container with a secure lid, combine all the ingredients.

  2. Close the lid tightly and give it a good shake to mix everything well.

  3. Open, serve fresh, and enjoy!

This quick salad is a burst of crunch, creaminess, and refreshing, ready in seconds with no mess, just pure flavour in every bite.
