Many people are concerned that cooking reduces the nutritional content of vegetables and fruits. Although many nutrients are heat sensitive, this isn’t always the case with carotenoids.

The lycopene in tomatoes undergoes a structural shift when cooked, making it more effective. Similarly, boiling carrots increases beta-carotene absorption.
